煮的泰國蝦怪怪的求解

今天家裡我自己來煮泰國蝦,我以母親買來的死的泰國蝦<聽說沒死很久>來烹煮,我用乾炒的方式加點水喊紹興酒提香,然後炒約8~13分左右,中途放了鹽、蒜末、辣末拌炒~即可。

1.為何我的蝦子的肉會軟軟的,也有點爛爛的
2.我有發現有些蝦腦是萎縮黑黑的,是煮太久嗎~還是不新鮮<要煮之前我有確定蝦子本身頭沒有很黑的地方>
3.我烹調方面有問題嗎
