水變紫色的 ------- 紫色花椰菜 含有紫色花色素苷。花色素苷是水溶性的。

花色素苷（英語：Anthocyanin，簡稱花色苷）是一種常見的水溶性植物色素，其結構為花青素與糖類以糖苷鍵結合。

花椰菜變回綠色 ------- 綠色花椰菜有很多葉綠素，此葉綠素包裹在葉綠體內，加熱後，葉綠體裂開露出葉綠素，葉綠素的量遠大於紫色花色素苷的量，於是顯現出葉綠素的綠色。另一種說法是，原先是紫色花色素苷遮蓋住了葉綠素的綠色，遇水之後，紫色花色素苷被水溶入水中，露出被蓋住的綠色。

紫色花椰菜-------有一種是花冠是紫色，梗子是綠色。另一種，花冠與梗子都是紫色。
